Mangalore Buns

 Hello Namaste, 

Today  we will see the recipe  of manglore  buns. The name itself tells the origin of the buns..It's popular breakfast in udupi and mangalore region.Its usually prepared with maida but here I am using both maida and wheat flour..It's not a instant recipe you have to ferment it nicely or else you won't get fluffy buns.Kneading a dough is also important , it should be soft dough. Finally,  ripe or over ripe banana is must. I used yelakki Banana (putbale).. you can use any type of Banana. 




INGREDIENTS : 

Makes 15 buns


● Banana - 5

● Wheat flour- 1 cup

● Maida - 1 cup

● Ghee - 8 spoon

● Curd - 1/4 cup

● Sugar - 10 spoon

● Salt - to taste 


Method :

• In a large mixing bowl take 5 ripened banana. Add 10 spoon sugar, 1/4 cup curd, 8 spoon ghee and salt.


• Mash it well but don't blend banana in mixi.


• Now add 1 cup wheat flour and 1 cup maid.Remember it should be in equal proportion add too much maida or wheat flour. If you are comfortable with handful measurements take equal handful flours .For instance if you are taking 5 handful maida then you have to take 5 handful wheatflour.


• Knead the dough till it turns smooth and cover it for fermentation. Minimum 8 hours is required. 


• Next day, knead the dough again and pinch a small ball sized dough. 


• Dust with some maida and roll slightly thick than poori but Size is poori size only.


• Deep fry the buns in hot oil..Fry it on both sides keeping the flame on medium. Fry until it turns golden brown. 


• Finally you can serve it with chutney or saagu or you can also have them plain.
