Sweet Lemon Pickle

Today we will see one unique pickle recipe that is Sweet Lemon Pickle. Sweet Lemon Pickle Recipe that is packed with so much flavour, yet made with very few ingredients. Serve it along with parathas or just lemon rice or curd rice.This pickle has a sweet taste and is sour, spiced, aromatic flavors.This pickle recipe is very easy to make but is not an instant pickle. For this, a few days is required for the pickle to mature.
Ingredients :
• Lemon - 1/2 kg
• Gooseberry (nellikai) - 1/4 kg
• Ginger - 3 tsp
• Green chilli - 5
• Sugar - 1/2 kg
• Rock salt - 3 handful

• Coconut oil - 10 tbsp
• Pepper - 1 handful
• Turmeric - 1/4 tsp
• Kashmiri chilli powder - 3 tsp
For masala :
Mustard - 2tsp
Cumin(jeera) - 1 tsp
Fenugreek seeds - 1/2 tsp
Asafoetida (hing) - 1/4 tsp
• Pepper - 1 handful
• Turmeric - 1/4 tsp
• Kashmiri chilli powder - 3 tsp
For masala :
Mustard - 2tsp
Cumin(jeera) - 1 tsp
Fenugreek seeds - 1/2 tsp
Asafoetida (hing) - 1/4 tsp
Method :
• Rinse, wipe and take the lemons, Gooseberry and ginger. Make sure all are dry.
• Chop the lemon ,ginger and Gooseberry into pieces. Make sure chopping board, knife and hands are dry.
• In a large vessel add chopped lemon,Gooseberry (nellikai), ginger , green chilli (dont chop add as it is), sugar and salt mix well and keep it aside for 10 to 12 hours.
• After 10 - 12 hours , boil it in medium flame for 20 minutes switchoff the flame..let it cool completely.
• In a pan add mustard seeds, cumin seeds, fenugreek seeds and Asafoetida..dry roast all ingredients. when methi's color changes switch off the flame .
• When it cooled down make a powder and add this to the boiled lemon and Gooseberry. (Make sure lemon must cooled down completely then only you can add masala powder. ) Mix well.
• Then add 3 tsp kashmiri red chilli powder (if you prefer more spicy then add more chilli powder)and give a good mix.
• Heat coconut oil in a pan add pepper seeds..when coconut oil starts boiling switch off the flame and add to the lemon pickle..mix well.
• Now the pickle is ready ..for better result use it after 15 days.
