Uppu saaru recipe

Today I will share, the uppu saaru recipe. This is a very traditional recipe popular in the Mandya – Mysuru(Karnataka)region. In Kannada we call it uppu saaru I don't know what'll call it in other languages.  You can translate uppu saaru as salted rasam. There are a lot of variants in uppu saaru. You can prepare avarekal(double beans)uppu saaru, nugge soppu(drumstick leaves)uppu Saru, or you can use mixed green leaves,  the lentils and beans are cooked along with the greens in water. the stock is then flavored with a spice paste to make saaru / rasam. The drained lentil-bean-green mixture is used to make a stir-fry called palya. This is a two-dish-in-one recipe.
This is an everyday recipe served for lunch along with Ragi Mudde(ragi balls) or Rice. I make a simple uppu saaru using dal(toor dal) only. In this recipe, I will tell you how to make uppu saaru Khara also.




INGREDIENTS:
Serves : 3

1. Toor dal(boiled) - 1/2 cup
2. Extracted dal Water( stock) - 3 cups
3. Kashmiri red chili- 3
4. 1 tsp - cumin seeds
5. Garlic pods - 15
6. Medium onion - 1
7. Coriander leaves - 1 handful
8. Tamarind - small gooseberry size
9. Turmeric- 1/2 tsp
10. Salt  - to taste
11. Oil 1 tsp

Method of Uppu Saaru Khara:

• In a frying pan heat, 1 tsp oil, add 15 pods garlic,  1 tsp jeera(cumin seeds), and 3 red chilies (you can adjust red chili as per your taste).fry for a second then add onion and fry until it is transparent.

• In a mixer, add small gooseberry size tamarind,  1 handful of coriander leaves, and 1 tsp salt and fried items. grind coarsely. Then add boiled 1/2 cup toor dal. (Don't add water) again grind coarsely. Keep it aside.

Method of Uppu Saaru :

• Boil extracted water(stock), add turmeric, 1/2 tsp salt, and 2 tsp prepared uppu saaru Khara..boil well and switch off the flame.

• Serve with Ragi balls or steamed rice.

• The saaru is mixed with a dash of Khara and mixed with hot rice or ragi balls and eaten... it's yummy 😋  try once...

• Khara also can be eaten as a chutney with hot rice adding 1 tsp of coconut oil.
