Snake gourd kootu recipe | snake gourd kalas recipe

 Paduvalakai/ snake gourd kalas or kootu is a very simple curry with very few ingredients. This is a no dal curry prepared using snake gourd and is sweet in taste. 




INGREDIENTS:

• snake guard- 2 medium
• Rice flour  - 2 tsp
• Jaggery  - lemon size / 4 tsp jaggery powder
• Salt to taste

For Tempering:

1. 2 tbsp  coconut oil
2. 1 tsp urad dal
3. 2 sundried chilies ( majjige menasu)
4. 1/2 tsp mustard seeds

METHOD :

• scrape, wash, and finely chop the snake gourd.

• Take chopped snake gourd to add sufficient water and add jaggery to make it boil...Please note this recipe shall have a thick gravy.

• In the meantime, make Rice flour paste by adding water to 2 tsp flour. Keep it aside. This gravy is supposed to be very mild and sweet.

• Once the snake gourd is cooked in half add salt and boil for 5 minutes, then add rice flour paste and stir continuously for 5 minutes. when it thickens switch off the flame. 

• Temper it with oil, urad dal, mustard seeds, and sundried chili ( if you don't have sundried chili,  you can add 1 red chili) Serve it with hot rice and curd chili.
