Eggless cake recipe without oven
Popular and flavoured cake recipe made with myriad dry fruits, fruit juice and cake flour. This is an eggless version.
• Milk 1/4 cup
• Lemon juice 1/2 tsp
• Orange juice 1/2 cup
• Dry fruits 1 hand ful (kiwi,papaya,rock melon, red plums,pineapple,honey melon,red plums)
• Tutti frutti 1/2 cup
• Cheery 2 tbsp or 6tsp
• Black raisin 2 tbsp or 6tsp
• Mixed nuts 2 tbsp or 6tsp
• Brown Sugar 1 cup
• Honey 2 tbsp or 6tsp
• Maida 1 cup
• Milk powder 2 tbsp or 6tsp
• Corn flour 1 tbsp or 3tsp
• Baking powder 1 tsp
• Baking soda 1/2 tsp
• Spice powder 1/2 tsp
• Melted butter 1/4 cup
METHOD:
• firstly, take milk and add lemon juice, mix well and keep it aside.(if you have curd you can use 1/4 cup but don't use sour curd).
• Then take 4 mini Oranges and extract juice and keep it aside.
• In a mixing bowl add 1 handful dry dry fruits (kiwi,papaya,rock melon, red plums,pineapple,honey melon,red plums), black raisins 2tbsp, 1/2 cup tutti frutti, mixed nuts 2tbsp, honey 2tbsp, 1 cup brown sugar, 1/2 cip orange juice. Mix well and soak for 2 hours.
• In a mixer jar add 2 piece cinnamon, 1 Nutmeg make a powder keep it aside.
• Add 1 cup maida, milk powder 2 tbsp, 1 tbsp cornflour, 1tsp baking powder, 1/2 tsp baking soda, 1/2 tsp cinnamon and Nutmeg powder (spice powder), melted butter to the soaked dry fruits. Mix everything in a cut and fold method.
• transfer the cake batter to a tin. i have used tin of dia: 8 inch, height: 4 inch. make sure to line a butter paper at the bottom to prevent from sticking. If you don't have butter paper then grease the tin with ghee.
• place the cake pan into the preheated thick vessel. I took my old 5 lit.cooker. (place a cooker stand and then place the cake pan). you can take any thick vessel. Cook for 1 hour in a medium flame.
• insert a toothpick and check if the cake has baked completely.
• cool the cake and then unmould the cake.
• finally, enjoy eggless cake and store in an airtight container and serve up to a week.
